Quick Beetroot & Feta Salad

If you’re in a rush (or just feeling super lazy) and need a lunch that is both healthy and satisfying, then look no further – this beetroot and feta salad is the perfect candidate for the job.


I recently made this salad and found it surprisingly filling. It kept me stuffed for four hours straight, which makes it the perfect lunch to take to the office, since you won’t have to worry about food for the majority of the afternoon.


Serves 1

2-3 beetroots (sliced)
1/3 of a cucumber (sliced)
A handful of cherry tomatoes
1/4 cup of feta cheese (diced)
1/4 cup of pistachios (whole)
1 tablespoon onions (diced)
1/2 lemon
A dash of olive oil
A pinch of salt
A pinch of pepper

Combine the ingredients together in a bowl and stir. Squeeze the juice of half a lemon, add a dash of salt, pepper and olive oil to season. Mix everything well and serve.
