5 Breakfast Ideas You’ll Love

I love having something hearty and delicious for breakfast. If I wake up late and find myself with limited time to prepare some food (which often means having to resort to something less healthy, like coffee and store-bought muffins), I end up feeling rather cranky.

I have found that what you eat for breakfast can affect your mood dramatically. So set yourself a bit of time in the morning and whip up one of these gorgeous and speedy breakfast.

Soft Boiled eggs and Asparagus Stalks

All you need is one or two eggs and several asparagus stalks. Throw them in a pan of boiling water and allow to cook. If you want your yolk to be extra runny, then five minutes should do the trick. Another six minutes for slightly runny yolk and eight minutes for firm yolks. Then remove the shell, place on a plate together with the asparagus and enjoy.

Feta, Sunflower Seeds and Smashed Avocado on Toast

All you need to do for this is to toast some bread, mash an avocado, spread it over your toast, top with crumbly cheese and pumpkin or sunflower seeds. Voila.

Mini Blueberry Muffins

How about some homemade blueberry muffins for breakfast? All you need to do is find an easy blueberry muffin recipe or whip up some basic muffin batter – melted butter, flour, sugar, milk and throw in some fresh berries.

And speaking of berries…

Soft Cheese and Blueberries on toast


To recreate this breakfast toast; simply spread some soft cheese over your bread and add fresh blueberries. Delicious!

Smoked Salmon with Chive Sauce on Bread

Make this yourself by pairing some smoked salmon with chive dip on top of a slice of bread (preferably ciabatta). Yum.
