2 Easy Mason Jar Salads

I’m sharing two salad ideas I have recently made. These salads are both tasty and easy to re-create, requiring very little preparation. You can transfer it into a container the following day to take it with you to the office or just simply eat straight from the jar. How convenient is that?

Jar Salad #1 – Cucumber and Couscous Mix

For this salad, all you need are the following ingredients (starting from the bottom and working our way up):

  • 1 tbsp mustard dressing
  • 1 tsp of diced onions
  • 1 tsp minced hot peppers (optional)
  • 1/4 cucumber, sliced into fairly thick rounds
  • 8 walnuts
  • 4 sundried tomatoes, chopped up
  • 4 dried apricots, chopped up
  • 7 green or black olives
  • 8 cherry tomatoes
  • 1/4 cup boiled couscous (you can also use quinoa or pasta)
  • Salad leaves of your choice (I chose rocket leaves as they go especially well with this salad)

When you’re ready to eat, simply mix everything up and devour.

Jar Salad #2 – Apple, Radish and Couscous

To recreate this salad, add the following into a jar:

  • Classic dressing of olive oil, salt, pepper and lemon juice (or a dressing of your choice)
  • 1 tbsp of diced onions
  • 1 apple, sliced (squeeze some lemon over it to preserve the colour)
  • 1 red pepper, sliced
  • 2 radishes, sliced into rounds
  • 1 carrot, thinly sliced
  • 1/4 cup boiled couscous
  • Salad leaves

Toss everything together when ready to eat. And voila, you’ve got yourself a healthy and tasty salad.
